Strawberries

Icing sugar

Balsamic vinegar

Lemon juice

Method

  1. Preheat the combi steam oven, Sous Vide function 84˚
  2. Slice strawberries into rounds and place in a bowl with remaining ingredients and mix lightly until combined.
  3. Place mixture into a vacuum bag and seal in vacuum drawer on level 2 suction and seal.
  4. Place on rack in preheated combi steam oven and cook for 15 minutes.
  5. Refrigerate until required if necessary.
